Creamy Avocado Dressing

After the holidays I like to incorporate healthier dishes in my meal planning, but it isn't always easy trying to push more fruits and vegetables. One recipe that helps spice up a simple salad is homemade avocado dressing. It's a versatile recipe one that can be used to substitute higher calorie dipping sauces, or replace sandwich mayo.

Ingredients:

  • 1 Avocado

  • 1/4 cup fresh chopped cilantro

  • 1/4 cup low fat sour cream

  • 1 tablespoon lemon juice

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

Steps:

  1. Place ingredients in a food processor or blender.

  2. Thin the dressing by adding small amounts of water until dressing reaches desired creamy consistency.

  3. Store in an air tight container for 1-2 weeks.

Want to add a little kick to the dressing? Add some cayenne pepper. Garlic would make this dressing flavorful. What other ingredients will you try? Drop your suggestions in the comments.

With love from Peak Valley,
