After the holidays I like to incorporate healthier dishes in my meal planning, but it isn't always easy trying to push more fruits and vegetables. One recipe that helps spice up a simple salad is homemade avocado dressing. It's a versatile recipe one that can be used to substitute higher calorie dipping sauces, or replace sandwich mayo.
Ingredients:
1 Avocado
1/4 cup fresh chopped cilantro
1/4 cup low fat sour cream
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
Steps:
Place ingredients in a food processor or blender.
Thin the dressing by adding small amounts of water until dressing reaches desired creamy consistency.
Store in an air tight container for 1-2 weeks.
