Caramel Popcorn

This time of year there are always parties to attend. A side dish I love to bring is Caramel popcorn. It also makes a great gift to give to coworkers, neighbors or friends.


  • 1 cup butter

  • 2 cups brown sugar

  • ½ cup corn syrup

  • 1 tsp salt

  • ½ tsp baking soda

  • 1 tsp vanilla

  • 5 quarts popped popcorn - for best results used kerneled popcorn.


  1. Preheat oven to 250 degrees.

  2. Place popcorn in a large pan that you can stir the popcorn when you coat your with caramel .

  3. In a medium saucepan over medium heat, melt butter.

  4. Stir in brown sugar, corn syrup, and salt.

  5. Bring to a boil, stirring constantly.

  6. Boil without stirring for exactly 4 minutes.

  7. Remove from heat and stir in baking soda and vanilla. Be careful it may spit once it hits the bottom of the pan.

  8. Pour in a thin stream over the popcorn and stir to coat. It cools very fast, so this step has to be done quickly.

  9. Place popcorn in the oven and stir every 10-15 minutes (depending on stove and baking dish) for a total of 1 hour.

  10. Remove from oven and let cool completely before breaking into pieces.
